By searching valuable animals you'r bound to increase your experience even when just a little, and the monsters may also drop an extra item every once and then. But the most important thing, the bread and butter, is surely the pure skin that a leather worker can later work and turn in to a more valuable armor. There's even a market regarding leather scraps and bits, something that sounds a lttle bit offensive, but may bring you golden benefits.
